Composition
Adding ingredients, intermediates and additives, quantities, profiles, groups and row options.
Vadovas pateikiamas italų ir anglų kalbomis: čia pateikiama anglų kalba parengta versija.
The Composition tab is the recipe: rows with quantities as you weigh them. From here the program calculates the ingredient list, allergens, QUID and nutrition values.
Adding rows
In Add ingredient, intermediate or additive… type the name and press Enter, then the quantity in grams. Results are grouped into:
- Ingredients of your organization;
- Intermediates: products marked as intermediate (see Intermediates);
- Additives: from the catalog of authorised additives, with their function (for example "raising agent");
- From reference databases: CREA and USDA foods that become an ingredient at once;
- Create ingredient “…”: a new ingredient to complete later.
Below the rows you see the Total initial mass, and next to each quantity its share of the initial mass.
Row options
Each row's Row options menu (the three dots) offers:
| Option | Purpose |
|---|---|
| Nutrition profile | Which of the ingredient's profiles to use in this product. Without a choice the default applies |
| On the label | For compound ingredients and intermediates: Name and components ("chocolate (sugar, cocoa…)"), Components only (the components join the list as ingredients of the product) or Name only |
| Custom label text | Replaces the ingredient's text in this product only |
| Show scientific name | Adds the ingredient's scientific name |
| Evaporates when cooked | For ingredients such as alcohol: the weight in the finished product is estimated after evaporation |
| Order for equal weights | Decides the list order between ingredients of equal weight |
| Move up, Move down, Remove | Orders or removes the row |
Name only is allowed only where the regulation permits it: if the compound contains allergens or weighs more than 2%, the program flags that the components must be listed.
The QUID column
For each row choose Auto (the percentage is shown when needed, for example when the ingredient is named in the name of the food), Show or Hide. See QUID.
Groups
Select several rows with the checkboxes and choose Group: on the label they appear under a common name, for example "dough (flour, butter)". Name the group in each language and, if needed, set the Group QUID. Ungroup dissolves it.
To check
Next to a row To check may appear with the reason: missing nutrition values, water missing from the profile, an allergen named in the text but not declared, a missing translation, an internal note on the ingredient. The same warnings are in Completeness (see Preview and completeness).
