Nutrition profiles and suppliers
Values per 100 g, several suppliers for the same ingredient, edible portion, costs and attachments.
Ghidul este disponibil în italiană și engleză: versiunea în limba engleză este prezentată aici.
A nutrition profile holds an ingredient's values per 100 g from one source. The same ingredient can have several profiles: one per supplier, or one from a database and one from the specification sheet.
Nutrition values
In the Nutrition values tab fill in the Declaration (per 100 g): energy, fat, saturates, carbohydrate, sugars, fibre, protein, salt. Energy is recalculated by the engine with the legal conversion factors (Annex XIV of Regulation (EU) No 1169/2011), so you do not need to enter it.
With Add nutrient you enter other values: water, ash, starch, polyols, mono and polyunsaturates, minerals, vitamins. Water matters when the product has a weight loss: without it, the program assumes zero.
The values are checked for consistency, with a warning if:
- saturates exceed total fat;
- sugars exceed carbohydrate;
- the sum of macronutrients, water, ash and salt is far from 100 g.
Several profiles for one ingredient
New profile creates an empty profile or a copy of the one open. One profile is the Default: it is used in products unless you choose another profile for a row in the composition. Compare profiles sets the values side by side and highlights differences.
The default profile cannot be deleted; to change it use Make default on another profile.
Profile parameters
| Field | Purpose |
|---|---|
| Edible portion | The share actually used, for example eggs without shell. Needed for foods taken from databases, which give values for the edible portion. |
| Added sugars | For markets that require them in the table (United States and Canada, coming soon). |
| POD and PAC | Sweetening and anti-freezing power relative to sucrose = 100, for ice cream and pastry. Compute POD and PAC from nutrients estimates them from the profile's values. |
| Cost | Purchase price per kg: used for recipe costs in Process and pack. |
| May contain | The cross-contacts declared by this supplier (see Ingredient allergens). |
Attachments
In the ingredient's Attachments tab, or the Profile attachments, upload specification sheets, certificates and images: PDF, PNG, JPG or WebP up to 20 MB. They stay next to the values you copied from them, handy for inspections.
When values change
If you edit a profile used in products with an approved label, a notice shows how many products and labels are affected. After saving, those products appear in Home among those to review (see Versions, comparison and restore). Approved labels never change by themselves.
