Ingredient list
Weight order, added water, compound ingredients, intermediates and additives (Article 18 and Annex VII).
Ръководството е достъпно на италиански и английски език: тук е показана английската версия.
The ingredient list builds itself from the recipe, under Article 18 and Annex VII of Regulation (EU) No 1169/2011.
Weight order
Ingredients are listed in descending order of weight at the time of use, that is as you weigh them in the recipe. Two exceptions:
- added water and volatile ingredients (for example alcohol that evaporates) are listed by their weight in the finished product, after weight loss. That is why in breadsticks the water, which evaporates in the oven, can drop below the oil;
- added water under 5% of the finished product is not listed.
At equal weight the row's Order for equal weights option decides.
Compound ingredients
A compound ingredient (chocolate, a cream mix) appears with its name followed by its own ingredients in brackets: "chocolate (sugar, cocoa mass, cocoa butter, emulsifier: soya lecithin)". The bracketed list may be left out only if the compound weighs less than 2% of the finished product and contains no allergens.
Intermediates
With Components only an intermediate is broken down: each ingredient appears once, with its total weight (used directly plus contained in the intermediate). With Name and components it appears like a compound ingredient.
Additives
Additives appear with the name of their functional class followed by their specific name or E number (Annex VII, Part C, and Regulation (EC) No 1333/2008): "raising agent: sodium bicarbonate" or "raising agent: E500". Choose the form in Settings › Labels › Additive names.
Groups
Groups put several rows under a common name, for example "dough (wheat flour, butter)": useful when a preparation has a recognisable name but is not a separate intermediate.
Custom text
An ingredient's text can be changed in one product only with Custom label text, without touching the ingredient in your records. Allergens stay those of the ingredient: if the new text does not name them, the program adds them in brackets and tells you.
