Creating an ingredient
Label text, simple and compound ingredients, added water and notes.
Ο οδηγός διατίθεται στα ιταλικά και στα αγγλικά: εδώ παρουσιάζεται η αγγλική έκδοση.
Ingredients are the raw materials you use in recipes. Each has a text to print, the allergens it contains and one or more nutrition profiles.
New ingredient
From Ingredients › New ingredient enter:
- Label text: how it will appear in the ingredient list, for example "type 00 wheat flour". It is translated into the other label languages;
- Internal name (optional): to find it in your records, for example "00 flour Rossi Mill";
- Type: Simple or Compound (see below).
You can also create it straight from a product's composition: type the name in the search field and choose Create ingredient “…”; then complete values and allergens.
The ingredient page
The page has five tabs:
| Tab | Content |
|---|---|
| Details | Label text per language, internal name, code, type, scientific name, country of origin, internal notes |
| Nutrition values | The nutrition profiles (see Nutrition profiles and suppliers) |
| Allergens | What the ingredient contains (see Ingredient allergens) |
| Usage | Which products use it |
| Attachments | Specification sheets, certificates and images |
Internal notes appear as a warning when the ingredient is used in a product: useful to remember, for example, that a supplier is changing its recipe.
The country of origin (two-letter ISO code, e.g. IT) is used for the origin of the primary ingredient.
Simple and compound ingredients
- Simple: a single ingredient, such as flour, butter, sugar.
- Compound: bought with its own ingredient list, such as chocolate or a cream mix. In Ingredient list of the compound copy the list from the specification sheet, wrapping allergens in double asterisks:
sugar, cocoa butter, whole **milk** powder, emulsifier: lecithins.
On the label a compound ingredient appears with its name followed by its components in brackets. If it weighs less than 2% of the finished product and contains no allergens, the components may be left out (Regulation (EU) No 1169/2011, Annex VII, Part E); if it contains allergens the list is always required. You choose the behaviour row by row in the product's composition.
Added water
Tick Is added water for the water you put in recipes. Added water follows special rules: it is counted after weight loss and is not listed if it is under 5% of the finished product (Annex VII, Part A).
List and deletion
The Ingredients list filters by allergen, type and whether nutrition values are present, and shows how many products use each ingredient. An ingredient used in a product cannot be deleted: remove it from the recipes first. Deleting it does not change products already approved.
